Symptoms were dying under any throttle when cold, being able to tolerate increasing amounts of throttle as it gets warmer. It also felt slow to rev, although it could just be the throttle wasn't wide enough to open up the other barrel on the carb.
Blew some guck out of one of the jets, so hopefully that should help. The choke butterfly was loose as well, so that might have caused the cold-running issues. Lastly, replaced the little diaphragm in the acceleration pump so hopefully that'll sort the slow revving.
Unfortunately it's properly dark now. Tomorrow I'll bolt everything back up and see if it's made a difference :)

As it's on the bench already, why not a full rebuild (kit) now?

I ordered a refresh kit, but it came with a couple of mismatched parts so I haven't changed everything.
If I put it back on the car and everything works fine I'll leave it for now. Eventually it'll be getting a twin-carb setup anyway, so if it works till then that's all good.

No worries :) I had originally planned to rebuild it fully, but the rebuild kit I ordered wasn't quite comprehensive.
